Peanut Butter Recipe
1. Soak peanuts overnight.
2. Discard soaked water next day.
3. Wash it with fresh water.
4. Cover it in terry towel so that the peanuts can sprout. Ensure these sprout only till the bulb comes out. Else, they get bitter.
5. Spread the sprouted peanuts on a clean cloth. Let it dry in shade.
6. Dry it in sunlight covered with a thin cotton cloth so that it is protected from dust and also retain volatile compounds. Depending upon the intensity of sunlight 2 to 5 days to turn dry and crispy.
7. Fill it in a chutney jar of your mixer/grinder. Ensure that it is 3/4th of jar's capacity. Use stone grinder for better quality and taste. Giving breaks in between, so that it will not generate heat.
8. Grind till it becomes fine butter. You can make any nut butters and/or seed butters in this way.
Note: Do not add any water or oil.

Salted Peanut Butter: Add a pinch of salt while grinding to make it Salty peanut butter.
Choco Peanut Butter: Add Cocoa or Cacao powder and jaggery while grinding to make Choco Peanut Butter.
Shelf life of peanut butter without refrigerator - 3-6 months
